The milk actually comes from the italian water buffalo (Bos bubalis L). It looks a lot like a cow, with long horns, NOT the american buffalo (Bison bison). Arthur's uncle, Micky, insisted that we eat these fresh. It was like eating a salty, warm, cow flavored piece of chewing gum. The texture relaxes quite a bit after it's sat in the fridge for a few hours.
